    The Fruit:

    The Shiraz component was taken from vineyards in the southern end of the Barossa Valley near Lyndoch and the Eden Valley, where growing conditions are excellent for allowing the varietal characters to fully develop and produce grapes of intense concentration and flavour. Cabernet Sauvignon was sourced mainly from my own Barossa vineyards, and also a portion from the cooler climate of the Coonawarra, which is known for its minty, green-leaf character.

    The Winemaking:

    Both varieties were crushed and fermented separately and left on skins a short time to ensure full flavoured and soft textured wines. The ferments were pumped over three times a day and completed primary fermentation in French and American oak and then aged for between 15 and 18 months in old puncheons. After blending, the wine was on tirage for 18 months before being disgorged and liqueured with 1996 Vintage Port, which has contributed to the wine's incredible complexity.

    This quintessential and stylish Australian blend of Shiraz and Cabernet Sauvignon is an indulgent wine, which is complex, rich and utterly delicious. It has been in the making for some time, we first started to put aside small parcels of fine wine as long ago as the 2000 vintage, but the blend is made from premium parcels of base wine predominantly from the 2001 and 2002 Our inaugural release of Sparkling Shiraz Cabernet is deep ruby in colour, with a complex, earthy nose of smokey oak, bacon and spicy cedar along with rich fruit characters of liqueur cherries and blackberries. It is elegant and lively with the big flavours of the nose carrying through to the palate. It has a creamy mousse and elegant mouth feel finishing with a perfect balance of acidity and fruit sweetness. This wine perfect with duck, and is a favourite accompaniment to the Burge's Christmas dinner. vintages.

      Old-timers like me still have fond memories of the Seppelt Great Western and the Wynns Romalo sparkling burgundy wines. Use of that term is now banned by the terms of the pack with the European Union, but Grant Burge has re-created the style in this juicy 14 percent alcohol drop. It's ruby red, exhibits busy, persistent bubbles and has fruitcake scents. Multi-faceted characters come through on the palate, with plush plum flavour combining with layers of mulberry, peppermint and pecan nuts. Earthy tannins hold sway at the finish.

      This is an opulent wine if ever there was one and recently the winner of first place at Wine With A View in Edinburgh as chosen by the paying public. With grapes grown in two areas, Cabernet Sauvignon in the Coonawarra while the Shiraz comes from the Barossa Valley giving the quality expected from those regions. With vintages going back to 2001 this really is a wine made in true Champagne Method with care and time. The real trick up it's sleeve is that the dosage wine used is a Vintage 1996 Australian Port giving this wine a very unique quality. Can be matched to Duck or even a fry up but the match for me is a summer BBQ chilled from ice with the sun out and a burger in hand, horse or not.

      When it comes to sparkling red wine I have my reservations. I remember one, which was basically cheap red wine with carbon dioxide added to give it bubbles. But among my friends there are several aficionados of genuine methode traditionelle sparkling wines with straight shiraz or shiraz/cabernet blends among the foremost. So they will be keen on Grant Burge's latest sparkling shiraz/cabernet NV. It's a classic example of this Australian blend with complex rich flavours reminiscent of Christmas cake with a lingering creamy finish.
