The Fruit & Winemaking
The fruit was hand picked into slotted crates, which are then dried under the sun for approximately three weeks before crushing to a tank press for overnight fermentation. Once pressed, the lightly fermented juice is fortified to 17.0% alcohol to arrest the fermentation. The wine is then matured in small oak for ten years to develop the flavours before blending.
This wine is an example of the traditional Pedro Ximénez style. It is all about density of aromas and flavours, toffee, chocolate fruit cake and maple syrup with burnt fig and salted peanut brittle. The wine compliments salted caramel ice cream perfectly or works well with strong blue cheese.

20 YEAR OLD MUSCAT

This exceptional liqueur muscat is made from muscat à petit grains. Its average age is at least 20 years.
While old material is crucial to the wine's richness and complexity,
careful blending with younger material provides the wine with muscat fruit characters. To control the aged rancio characters, the muscat is matured in larger cooperage than used for tawny port. We use a solera-based system, enabling us to consistently release wines of high quality and to gradually improve that quality even further. A limited quantity of muscat is drawn for bottling each year and the barrels topped up with selected younger wine.
Our 20 Year Old Muscat is a luscious, complex wine with enormous depth of rich, powerful flavours. While the wine shows ample aged rancio characters, it is crucial that these characters don't dominate. Careful blending has ensured that they are balanced by fresh muscat fruit flavours to produce a wine that is sweet but finishes cleanly and without being at all cloying.
This exceptional liqueur muscat is made from Muscat à Petits Grains, which is left on the vine to reach maximum ripeness and handpicked between 15-17 Baumé from selected vineyards in the Barossa Valley.
After fermenting and fortifying on skins to take advantage of the natural phenolics (skin tannins) of the muscat variety, the wine is aged in large barrels to control the aged rancio characters. Careful blending produces a wine of richness and complexity, enhanced with the wines taken from our solera-system, which enables us to consistently release wines of high quality.
This wine displays a deep amber colour with a slight rancio hue, which is also evident on the nose. Caramel aromas along with muscat raisined fruit suggest what's to come on the palate, which is generous and silky.
